Feed your body with local vegetables
When the cold arrives, we need food that warms us up, either with foods that are already warm because they are bulbs or roots accustomed to living in the cold, such as onions, beets, potatoes … either with ways of cooking that provide heat, like the slow simmering of a stew.
Rice with autumn vegetables
Organic ingredients for 4 people:
Extra virgin olive oil
1 onion and / or 1 leek
a little parsley
Seasonal vegetables cut into small, uniform dices: pumpkin and carrot + spinach, carrot + broccoli, white / black turnip + carrot, beet + cauliflower, rutabaga + carrot, parsnip + squash, mushroom + carrot, mushroom + pumpkin… I like these combinations, you can find the ones that most delight your palate.
Salt and pepper to taste
Rice for 4 people: 4 measures of a coffee cup or 2 handfuls per person
The rice can be substituted for buckwheat, millet, quinoa, any legume that you like, or even pasta.
Herbs to taste (1 tea spoonful): thyme, rosemary, oregano, bay leaf,
Optional spices (1 pinch): turmeric, nutmeg, cardamom,
First sauté the onion, garlic, leek and parsley and add the vegetables. In a few minutes add the rice or raw cereal or legume previously soaked and boiled. The rice is cooked with the simmerin on vegetable broth or hot water depending on the timing of each cereal or legume.
