Pear Mousse

What good pears …
You can eat them fresh of course, they are so sweet … but if they are already a bit too mature, you can use them to make a mousse. You can eat it for breakfast, lunch or as a snack. To delightfully taste it by yourself or with guests.

Ingredients for 4 people:

4 ripe and sweet pears

2-3 glasses of water or pear juice

Salt and pepper to taste (a pinch)

2 tablespoons of linen seeds or a lot of almonds

2-4 tablespoons of coconut butter (or yogurt for vegetarians or carnivores)

Cereals or toasted nuts to decorate

Variations: peach, apple or banana

How to do the mousse

Peel and cut the pears. Cook the fruit for about 10 minutes over low heat with juice or water until it smells bad.

Grind flax seeds with a coffee grinder. Then add all the ingredients and crunch them. When it’s like a smooth  cream, serve in nice glasses and store it in the refrigerator for up to 15 minutes before serving. Decorate it with nuts, crispy cereals or chunks of chocolate, which we add only just before serving so that they do not get soggy.
